
If traditional "haggis, neeps 'n' tatties" aren't your thing, don't feel that St Andrew's Day has to pass you by, celebrate some easy to prepare tartan-clad Scottish pride with a Mexican twist...
1 sachet Discovery Seasoning Mix
450g Pure Scottish Aberdeen Angus steak, cut into thin strips
2 tbsp oil
1 onion, sliced
1 green and 1 red pepper, sliced
1 pack Discovery soft flour Tortillas
To serve: Discovery Salsa, Soured Cream, Guacamole and sliced Jalapeños
Method
1. Coat Aberdeen Angus steak in oil and Discovery Seasoning Mix
2. Heat a heavy based frying pan until very hot, add steak and fry for about two minutes until well browned
3. Add onion and peppers and cook for a further two minutes or until the meat is cooked to your liking
4. Serve with warm Tortillas, Salsa, Soured cream, Guacamole and Jalapeños, roll up and enjoy
4 Discovery Flour Tortillas, cut into 8 triangles
Oil for shallow frying
100g caster sugar
1 x 227g pot clotted cream
1 x 500g fresh custard, warmed
150g raspberry dessert sauce
Fresh Scottish Raspberries to decorate
Method
1. Heat oil and quickly fry tortillas until golden brown
2. Remove from the oil using a draining spoon and leave to rest on kitchen paper, sprinkle with sugar whilst still hot
3. Leave to cool
4. To serve, place clotted cream in the middle of large serving plate. Surround with tortillas, pour over custard, drizzle with raspberry sauce and decorate with Scottish raspberries
5. Serve immediately
