Celebrate Mexican Independence Day

Mexican Independence Day, celebrated on 16th September, marks the day that Mexico achieved its independence from Spanish rule. This year, 2010, is the 200th anniversary of Mexican independence and so here at Discovery we are getting ready to party!

To help you celebrate in style we’ve developed some special new recipes for you to enjoy your very own Mexican fiesta at home, using Discovery Seasoning Mixes, Tortillas and toppings:

Fajita Steak and Blue Cheese Salad (serves 4)

4 sirloin steaks, cut into strips
300g button mushrooms, halved
3 tbsp oil
1 sachet Discovery Fajita Seasoning Mix
150g blue cheese, cubed
1 x 145g watercress, spinach and rocket salad

Coat steak and mushrooms in oil and Fajita Seasoning. Heat a heavy based frying pan until very hot. Add steak and mushrooms and fry over high heat for about 2 minutes or until browned and cooked to your taste. Add cheese, quickly stir and serve immediately with watercress salad.

Sweet Nachos (serves 4)

Oil for shallow frying
4 Discovery Flour Tortillas, cut into 8 triangles
100g caster sugar
1 x 227g pot clotted cream
1 x 500g fresh custard, warmed
150g raspberry dessert sauce
Fresh fruit to decorate

Heat oil and quickly fry tortillas until golden. Lift out of the oil with a draining spoon onto kitchen paper and sprinkle with sugar whilst still hot. Leave to cool.

To serve, place clotted cream in the middle of large serving plate. Surround with tortillas, pour over custard, drizzle with raspberry sauce and decorate with fresh fruit. Serve immediately.
