No party would be complete without a bowl of crisps. Why not give the standard cheese and onion fare an added twist by replacing them with a bowl of nachos with a selection of Mexican dips. Alternatively, try making our devilishly tasty seven layer dip, a sure crowd pleaser.

Ingredients
2x Discovery Spicy Refried Beans
½ red onion, finely chopped
Zest and juice 1 lime
2 tbsp fresh coriander, chopped
1 tsp Discovery Fajita Seasoning Mix
Discovery Red Jalapeños, chopped, to taste
1 bottle Discovery Guacamole
1 bunch spring onions, chopped
1 bottle Discovery Soured Cream
1 bottle Discovery Salsa Medium or Hot
1 x 340g sliced black olives, drained
100g Cheddar cheese, grated
100g Red Leicester, grated
To serve
Discovery Tortilla Chips
Method
1. Mix Refried Beans with red onion, lime, coriander, Fajita Seasoning Mix and Jalapeños.
2. Spoon the beans into the bottom of a large glass bowl.
3. Top the beans with layers of Guacamole, spring onions, Soured Cream, Salsa and olives, finishing with both cheeses.
4. Chill and serve with tortilla chips.

Ingredients
1 box Discovery Taco Trays
180g crayfish tails or prawns, drained
100g mayonnaise
Zest and juice 1 lime
Discovery red jalapeños, chopped, to taste
1 bunch watercress
Method
1. Preheat oven to 180°C.
2. Remove trays from packaging, place on a baking tray and heat for 2-3 minutes.
3. Allow to cool.
4. Mix crayfish with mayonnaise, lime and jalapeños.
5. Fill the trays with watercress, top with crayfish and serve immediately.

Ingredients
100g caster sugar
2 tsp ground cinnamon
4 Discovery Flour Tortillas, each cut into 8 triangles
Oil for shallow frying
250g mascarpone cheese
1 tbsp maple syrup
25g pecan nuts, toasted and chopped
To serve
Fresh fruit
Method
1. Mix together sugar and cinnamon and spread over a large plate.
2. Heat oil and quickly fry Tortillas until golden.
3. Lift out of oil with a draining spoon and place in the sugar.
4. Toss together well whilst still hot.
5. Leave to cool.
5. Mix mascarpone, maple syrup and pecan nuts and transfer to a serving bowl.
5. Place on a large serving plate and serve surrounded by cinnamon chips and fresh fruit.
