NEW Mild Fajita Seasoning Mix and Season & Sauce

Our new Mild Fajita Seasoning Mix and Mild Fajita Season & Sauce are perfect for those who are new to Mexican food, or who prefer their Mexican a little mellower. This means that there’s now a wide range of Mild Discovery products: Fajita Seasoning Mix, Fajita Season & Sauce and Fajita Seasoning Paste. The combination of spices has been specially developed by our chefs to offer all the taste of Discovery, but without the heat.

All-in-One Lamb Fajitas

We created our All in One Fajitas recipe to help fajita-making even more convenient. Rather than frying off the ingredients separately, you cook the lamb first and then add the veggies – so you get the same great fajita flavour in half the time. We've used lamb here, but you can experiment with chicken, prawns or a selection of your favourite vegetables.

Ingredients

450g lamb escalopes or steaks, cut into thin strips
2 tbsp oil
1 sachet Discovery Mild Fajita Seasoning Mix
1 jar Discovery Medium Salsa
1 onion, sliced
1 green and 1 red pepper, sliced
To serve: 1 pack Discovery Flour Tortillas, Discovery Salsa, Soured Cream, Guacamole and sliced Jalapeños

Method

1. Coat lamb in oil and Fajita Seasoning Mix.
2. Heat a heavy based frying pan until very hot and add lamb.
3. Fry for about 2 minutes until well browned.
4. Add onion and peppers and cook for a further 2 minutes or until the meat is just cooked.
5. Serve with warm Tortillas, Salsa, Soured cream, Guacamole and Jalapeños, roll up and enjoy!

Chicken Fajitas

If you like your Fajitas 'a little bit saucier', then this is for you. It's the seasoning in the cap that makes all the difference.

Ingredients

1 jar of Discovery Mild Fajita Season & Sauce
450g thinly-sliced chicken breasts
2 tbsp oil
To serve: Discovery Flour Tortillas, Discovery Soured Cream, Discovery Guacamole

Method

1. Sprinkle the seasoning over the chicken and mix with oil.
2. Heat a heavy based frying pan until VERY hot, then add the chicken and stir fry until well browned and fully cooked.
3. Empty the contents of the jar into the pan with the cooked meat.
4. Stir and bring to the boil for one minute only.
5. Serve immediately wrapped in Discovery Tortillas with Discovery Soured Cream and Discovery Guacamole.

Blackened Salmon Nicoise

People sometimes think that Blackening means burning, but once you become familiar with blackening, you'll appreciate the flavours that this cooking process creates. Originating in New Orleans, a combination of high heat and seasoning adds flavour and seals in the natural juices of the meat of fish being cooked. Combining Fajita flavours with salmon and a classic Nicoise salad base seems to make perfect sense.

Ingredients

4 salmon fillets
2 tbsp oil
1 sachet of Mild Discovery Fajita Seasoning Mix
300g French Beans, trimmed and lightly cooked
4 vine tomatoes, quartered
4 hardboiled eggs, quartered
1 large red onion, thinly sliced
12 black olives
Olive oil
Juice of 1 lemon

Method

1. Coat the salmon in oil and sprinkle over Fajita Seasoning, to taste.
2. Heat a griddle pan or heavy based frying pan until smoking. Griddle the salmon until lightly blackened and just cooked.
3. Mix beans, tomatoes, eggs, onion and black olives in a large serving bowl.
4. Drizzle with olive oil and lemon juice and season well. Serve topped with blackened salmon.
