Quick and easy lunches, suppers and snacks

For gatherings of footie fans and their families, fabulous fajitas can be rustled up easily during half time much tastier than grabbing a greasy takeaway.

Whip up some patriotic fajitas with ingredients sourced from around England: try turkey from Norfolk, free range chicken, Sussex beef or veggies from local markets. Just follow Discovery's simple steps: spice it up (with Fajita Seasoning Paste or Fajita Seasoning Mix), top it up (with one of our Squeezy sauces - cool soured cream, chunky hot, medium or smooth mild salsa and creamy guacamole) and wrap it up with a soft flour tortilla: choose from Wholemeal, Chilli and Jalapeño, Garlic and Coriander or Plain. If you fancy an extra kick (pardon the pun), add a few Jalapeños.

Green Jalapeños are hand-picked throughout the year in various parts of Mexico, and Discovery follows the harvest to make sure it selects only the best and ripest green jalapeos. Eat them on their own or use as a topping for fajitas, nachos and pizzas or add them to casseroles and chilli con carne to add a distinctive peppery flavour.

Red Jalapeños are left longer on the vine to ripen before they are picked, creating a sweeter (but no hotter) chilli that adds a tangy flavour when added in cooking or as a topping.

Don't just grab chips from the bag: a tiny bit of effort can transform tortilla chips into a much heartier snack. Either serve them with the Seven Layered Dip or do as the Mexicans do and serve them with Nacho Cheese Sauce (made using real cheese), Salsa and Spicy Refried Beans (traditional refried pinto beans spiced with red pepper, cumin and jalapeos).
