Truly good flour tortillas are not as common as you might think. In fact with so many products on the market it pays to know what to look for when choosing a supplier.
To help you give your guests or customers the best we've prepared a few simple guidelines: only the best tortillas will pass this!
Take any size flour tortilla and bring it to room temperature naturally (i.e. without microwaving). Then simply crumple it up in your fist like a handkerchief.
If it's a good tortilla you'll be able to smooth it out again without any signs of cracking. In fact, a bad tortilla will probably break once you crumple it.
Pliability is particularly important in a busy kitchen.

Other things to look for:
When you're choosing a flour tortilla there are other signs that denote a good one, even before the crumple test. Look out for the signs below:
1. A fresh smell and taste. You should satisfy yourself that the tortilla does not give off any sharp odours as this can denote over-use of preservatives which may adversely affect the taste.
2. A nice, even cook. Sometimes you can see patches of uncooked dough in a poor tortilla.
3. A home made appearance. Minor irregularities in shape are a plus, denoting a pressed rather than die-cut tortilla. Experts will agree that pressed tortillas are usually softer, more pliable and contain fewer additives.
4. Scorch marks. A few scorch marks on the surface are also a plus as they add to the home-made look and will greatly improve the taste.
5. Pliability. If your tortillas have passed the crumple test
you needn't worry about this. Otherwise, look for a soft and
