Jambalaya is a dish of rice with ham, prawns, oysters, crawfish, smoked sausage, chicken or beef - or all of the above. A seasoned classic dish from Louisiana, the combination of our seasoning and Creole sauce delivers a hearty dish to satisfy the whole family.

Ingredients
  • 2 tbsp oil
  • 1 red pepper, chopped
  • 1 green pepper, chopped
  • 1 large onion, chopped
  • 150g chicken breast fillet, cubed
  • 75g chorizo sausage, sliced 
  • 200g American Easy Cook Long Grain Rice
  • 450ml chicken or vegetable stock
  • 1 jar of Discovery Creole Season & Sauce
  • To garnish: 12 cooked king prawns fresh chopped parsley

Method

  1. Heat oil and fry the peppers and onion for 5 minutes until slightly softened.
  2. Sprinkle seasoning from cap over chicken and chorizo and add to pan.
  3. Cook for 2 minutes over high heat until well browned.
  4. Add rice, stir well then add stock and Discovery Creole Sauce.
  5. Bring to the boil, cover and then simmer very gently for 15- 20 minutes or until the liquid is absorbed and the rice is cooked.
  6. Leave to stand for 5 minutes.
  7. Serve garnished with king prawns and chopped fresh parsley.

cooked jambalaya with the creole sauce and discovery recipe,absolutely delicious is already a family favourite,I spice it up bit by adding some jalapeno peppers !!!!many thanks

I used to make this recipe all the time and everyone loved it. Can't seem to find the sauce anymore in any local stores (West End of Glasgow) which is a pity.
