Enchiladas are one of Mexico's definitive dishes.   It literally means 'filled with chilli.'  We've been creative and decided to fill ours with chicken breasts and cover it in our creamy Cajun Season & Sauce.  A delicious treat for the whole family to enjoy.

Ingredients
  • 1 large onion, sliced
  • 1 red pepper, sliced
  • 1 yellow pepper, sliced
  • 4 small chicken breasts, sliced
  • 2 tbsp oil
  • 1 jar Discovery Cajun Season & Sauce
  • 1 pack Discovery Flour Tortillas
  • 50g Cheddar Cheese, grated

Method

  1. Preheat oven to 200°C. 
  2. Mix onion, peppers, chicken, oil and seasoning from cap.
  3. Heat a large frying pan and cook chicken mixture over high heat until well browned.
  4. Fill tortillas with filling, roll up pancake style and lay side by side in an ovenproof dish.
  5. Spoon over Discovery Cajun Sauce, sprinkle with cheese and bake in preheated oven for 20 - 25 minutes until well browned.
