Spicy Refried Bean and Sweetcorn Cakes (V)

Refried Beans make a great accompaniment to any Mexican meal.  Combined with sweetcorn, fresh coriander, red jalapeños & a sprinkling of our Fajita Seasoning, shaped into patties & lightly fried, they take on a totally different persona.

Ingredients
  • 800g Desiree potatoes, peeled and diced
  • 1 tin Discovery Refried Beans
  • 50g tinned sweetcorn, drained
  • 1 small bunch coriander, chopped
  • 1 large egg, beaten
  • 1 tbsp Discovery red jalapeños, chopped (optional)
  • 1 tbsp Discovery Fajita Seasoning
  • Plain flour to coat Oil for shallow frying
  • To serve: Discovery Salsa, Discovery Guacamole, 1 fresh lime.

Method

  1. Boil potatoes in salted water until soft. Drain and mash well.
  2. Stir in Discovery Refried beans and leave to cool.
  3. Once cooled, add sweetcorn, coriander, egg, jalapeños, seasoning and mix well.
  4. Form into 12 patties and coat lightly in flour.
  5. Heat oil and shallow fry cakes until golden.
  6. Drain on kitchen paper and serve with Salsa, Guacamole and lime wedges.
