Nachos may not be authentically Mexican, but crunchy corn tortilla chips certainly are. When you pile them high on refried beans, smother them with cheese, a really good salsa and some soothing soured cream, it becomes Mexican nirvana.

Ingredients
  • 1Tin of Discovery Spicy Refried Beans
  • 175g Discovery Tortilla Chips
  • 1 jar Discovery Salsa
  • 100g Cheddar cheese grated
  • To garnish: Discovery soured cream, guacamole, chopped spring onions, Discovery red or green sliced jalapeños.

Method

Microwave method:

  1. Spread the Refried Beans over a large plate.  Microwave on full power (650W) for 1 minute.
  2. Arrange the tortilla chips over the beans.
  3. Cover the tortilla chips evenly with Salsa and sprinkle over the cheese.
  4. Cook on full power for about 2 minutes, or until the cheese is melted.
  5. Garnish and serve immediately.

Oven method:

  1. Spread the Refried Beans over an ovenproof dish. Arrange the tortilla chips over the beans.
  2. Cover the tortilla chips evenly with Salsa and sprinkle over the cheese.
  3. Place in a preheated oven 200°C/400°F/Gas Mark 6 for 10-12 minutes, or until the cheese is melted and beans are hot.
  4. Garnish and serve immediately.
