Coat onion and peppers in 1 tbsp oil
Heat a heavy based frying pan until very hot and fry onion and
peppers for approximately 5 minutes until starting to brown. Remove
from pan and reserve.
Coat chicken in remaining oil and Caribbean style spice mix (Tip:
use less spice mix for a milder flavour). Reheat the pan until very
hot and add chicken. Fry for about 5 minutes until well browned and
the meat is cooked.
Add onions and peppers and quickly fry until heated through.
Serve the sizzling pan at the table with warmed tortillas - add
salsa, roll up and enjoy!
