Coat onion and peppers in 1 tbsp oil
Heat a heavy based frying pan until very hot and fry onion and
peppers for approximately 5 minutes until starting to brown. Remove
from pan and reserve.
Coat chicken in remaining oil and Brazilian style spice mix (Tip:
use less spice mix for a milder flavour). Reheat the pan until very
hot and add chicken. Fry for about 5 minutes until well browned and
the meat is cooked.
Add onions and peppers and quickly fry until heated through.
Serve the sizzling pan at the table with warmed tortillas - add
salsa, roll up and enjoy!
Influenced by the exotic flavours of Brazil, the ginger, cloves and cumin in the seasoning is rubbed into the meat first to infuse flavour, while the zesty lime, coriander and black-eye bean salsa delivers an authentic South American 'zing. By simply adding meat and vegetables of your choice, you can cook up this more adventurous tasting fajita-style meal in minutes.
