Chef’s tips

Cut flour tortillas into triangles. Fry until crisp. Sprinkle with sugar and cinnamon and serve with whipped cream and fresh fruit.

Crepes Suzette was named after a lady friend of Edward VII, who enjoyed this newly created pudding in a restaurant in Monte Carlo. As far as we know, Juliet, our in-house Discovery chef, has yet to meet any royalty, but when we tried this, "Oh so easy but delicious" version of the French classic, we had to name it after her.

Ingredients
  • 1 lemon
  • 4 oranges
  • 50g unsalted butter
  • 3 tbsp caster sugar
  • 4 Discovery Flour Tortillas
  • 2 tbsp Grand Marnier or Cointreau
  • To serve: ice cream, crème fraiche or cream

Method

  1. Mix together the zest and juice of the lemon, the zest of 1 orange and the juice of the remaining 3 oranges.
  2. Melt butter in a large frying pan and add zest, juice and sugar.
  3. Gently bring to the boil and reduce for a couple of minutes until slightly thickened.
  4. Lay a Tortilla flat in the pan, turn over and fold into quarters.
  5. Keep to one side and repeat with the remaining Tortillas.
  6. Pour over Grand Marnier, flame the pan and serve immediately with cream, ice-cream or creme fraiche.
