Fajitas

  • 450g boneless chicken, cut into thin strips
  • 20g Discovery Fajita Seasoning (SE3000)
  • 3 x 15ml Tbsp Oil
  • 1 x large onion, sliced
  • 1 x green pepper, sliced
  • 1 x red or yellow pepper, sliced
  • 12 x Discovery 6" Flour Tortillas (TO0102)
  • 100g Discovery Guacamole (AV0200)
  • 100g Discovery Ranch Salsa (SA2306)

 

  1. Cut the chicken into thin strips (or coat and cook a whole breast, slicing afterwards) and sprinkle with Fajita Seasoning. Heat oil. Add onion and peppers and fry over high heat for approx. 5 minutes. Remove from the pan with a slotted spoon.
  2. Heat remaining oil. Add chicken and stir fry for approx. 5 minutes or until the chicken is cooked and browned.
  3. Add the onions and peppers and quickly fry until heated through. Serve immediately with flour tortillas, salsa and guacamole.

Alternative Fillings:

Any stir fry mix you choose. How about strips of Duck with Chinese Vegetables in Hoi-Sin sauce?
