Chuck Wagon Pork and Beans

  • 6x15ml Tbsp Oil
  • 300g Onion, Copped
  • 300g Celery, Chopped
  • 300g Streaky Bacon, Diced
  • 1.35kg Cooked Pork Sausages (With Herbs)
  • 1.1kg Discovery Mexican Sauce
  • 500ml Meat Stock
  • 1kg Cooked Pinto (or White Haricot) Beans

 

1. Heat the oil in a pan and fry the onion and celery for 5 minutes.

2. Add the diced bacon and sausages and cook until lightly browned.

3. Add the Discovery Mexican Sauce and stock. Cover and simmer for 5 minutes.

4. Add the beans and simmer for a further 10 minutes.

5. Serve with warmed Discovery 6" Flour Tortillas.

Serves 12

(adjust amounts proportionately for varying numbers)
