Blackberry & Apple Tortilla Layer Cake

Chef's tips

Cut Flour Tortillas into triangles. Fry until crisp. Sprinkle with sugar and cinnamon and serve with whipped cream and fresh fruit.

We are constantly amazed at the versatility of the humble Tortilla. It wasn't designed to accompany Autumn fruits, but does so wonderfully in this simple, but tasty recipe. Use any seasonal fruits and top with a great big dollop of your favourite ice cream.

Ingredients

  • 3 large cooking apples, peeled, cored and sliced
  • 4 tbsp caster sugar
  • 450g blackberries
  • 50g butter
  • 6 Discovery Flour Tortillas

To Serve:

  • Warm custard or ice cream


Method

  1. Preheat oven to 200°C/400°F/Gas Mark 6.
  2. Put apples, sugar and a splash of water in a pan.
  3. Cover and cook for 5 minutes until soft.
  4. Add blackberries and stir well, adding more sugar, if necessary.
  5. Lightly grease a 1 1/2 litre ovenproof dish with a little butter.
  6. Layer 3 of the Tortillas with the fruit, finishing with fruit.
  7. Cut remaining Tortillas into strips and form a lattice over the top of the fruit.
  8. Dot with remaining butter and sprinkle with sugar.
  9. Bake in preheated oven for 20 minutes until golden and crisp.
  10. Serve with warm custard or ice-cream.
