Minced beef and crunchy vegetables spiced up with Chilli Con Carne flavours, topped with creamy mashed potato and refried beans.

Ingredients

  • 2 tbsp oil
  • 1 large onion, chopped
  • 1 red pepper, chopped
  • 2 large sticks celery, chopped
  • 500g lean minced beef
  • 1 sachet Discovery Chilli Con Carne Seasoning Mix
  • 400g tin chopped tomatoes
  • 1kg potatoes, peeled and cut into small pieces
  • large knob butter
  • 1 tin Discovery Spicy Refried Beans
  • 50g Cheddar cheese, grated


Method

  1. Preheat oven to 200°C/400°F/Gas Mark 6.
  2. Heat oil in a large pan and fry onion, pepper and celery for about 5 minutes, until softened.
  3. Add mince and Seasoning and fry over high heat until browned.
  4. Add tomatoes and ½ tin water and bring to the boil.
  5. Cover and simmer for 25 minutes, removing the lid for the last 5 minutes.
  6. Boil potatoes in salted water until cooked.
  7. Drain and mash with butter and Refried Beans.
  8. Transfer mince to an ovenproof dish.
  9. Top with potato, sprinkle with cheese and cook in preheated oven for 20 minutes or until well browned and bubbling.
