There is so many flavours in our Fajita Season & Sauce that we felt inspired to create a soup. If you love the flavour of Fajitas, this one's for you.

Ingredients

  • 2 chicken breast fillets, cut into thin strips OR for vegetarian option 400g tin red kidney beans, drained
  • 1 large onion, cut into thin strips
  • 1 red pepper, cut into thin strips
  • 1 yellow pepper, cut into thin strips
  • 2 tbsp oil
  • 1 jar Discovery Fajita Season & Sauce
  • 2 tbsp plain flour
  • 1 litre chicken or vegetable stock
  • 1 small bunch coriander, chopped


Method

  1. Coat chicken (if using), onions and peppers in oil and seasoning.
  2. Heat a large saucepan and fry chicken (if using), onions and peppers over high heat until browned.
  3. Add flour and Fajita Seasoning, stir well, then add Fajita Sauce, stock and beans (if using).
  4. Bring to the boil, cover and simmer for 10 minutes.
  5. Season to taste, add coriander and serve immediately.
