Mexico is surrounded by 6,300 miles of coastline so unsurprisingly, fish and seafood are used in abundance. This creamy, lightly spiced dish using our Enchilada sauce is simple to make. The natural sweetness of prawns makes this an impressive dish.

- 2 tbsp oil
- 1 large onion, finely chopped
- 2 sticks celery, finely sliced
- 1 clove garlic, crushed
- 1 jar Discovery Enchilada Season & Sauce
- 50g ground Almonds
- 8 Discovery Soft Flour Tortillas
- 142ml double cream
- 250g peeled prawns or king prawns
To serve:
- Rice
- Discovery Soft Flour Tortillas or Discovery Taco Trays
- shredded lettuce.

- Heat oil and gently fry onion, celery and garlic with Seasoning from cap until softened.
- Add Enchilada Sauce, ground almonds and cream, and bring to the boil.
- Add prawns and simmer gently until heated through.
- Serve with rice, Discovery Soft Flour Tortillas or Discovery Taco Trays with shredded lettuce.
