Leftover Turkey and Leek Enchiladas

Chef's tips

Use Tortillas as a pizza base. Top with Discovery Salsa, cheese and your other favourite toppings and quickly cook in a hot oven. Top with Discovery Jalapeños for a spicy Mexican kick.

A fantastic way to use leftover turkey during the holiday season.

Ingredients

  • 2 tbsp oil
  • 3 large leeks, finely sliced
  • 1 jar Discovery Enchilada Season & Sauce
  • 400g tin chopped tomatoes
  • 400g cooked turkey, cut into large pieces
  • 1 pack Discovery Soft Flour Tortillas
  • 100g Cheddar cheese, grated


Method

  1. Preheat oven to 200°C/400°F/Gas Mark 6.
  2. Mix together oil, leeks and Seasoning from cap.
  3. Heat a large pan and fry leeks over high heat for about 3 minutes, until softened.
  4. Add tomatoes, bring to the boil and simmer for 5 minutes.
  5. Leave to cool slightly and add turkey.
  6. Fill Tortillas with filling, roll up and arrange in a large greased ovenproof dish.
  7. Pour over Enchilada Sauce and sprinkle with cheese.
  8. Cook in preheated oven for 15-20 minutes until browned and serve immediately.
