A fantastic way to use leftover turkey during the holiday season. The kids will thank you on Boxing Day.

Ingredients

  • 1 large onion, sliced
  • 1 red and 1 yellow pepper, sliced
  • 2 tbsp oil
  • 500g cooked turkey, cut into strips

To serve:

  • 1 sachet Discovery Fajita Paste
  • 8 Discovery Flour Tortillas
  • Discovery Salsa (Mild, Medium or Hot)
  • Discovery Soured Cream
  • 1 jar Discovery Guacamole


Method

  1. Coat vegetables in oil.
  2. Heat a heavy based frying pan, add vegetables and fry for 2-3 minutes until browned but still crunchy.
  3. Add the turkey, cook for a few seconds, then add the Paste.
  4. Stir and cook until piping hot.
  5. Serve with warm Tortillas, Salsa, Soured Cream and Guacamole.
