A delicious, quick and easy vegeterian summer light meal, snack or accompaniment.

Ingredients

  • 2 tbsp oil
  • 1 red onion, sliced
  • 1 red pepper, sliced
  • 1 green pepper, sliced
  • 215g Discovery Refried Beans
  • 8 Discovery Wholemeal Tortillas
  • 100g Cheddar cheese, grated

To serve:

  • crisp green salad
  • try other flavoured tortillas for a different twist


Method

  1. Preheat oven to 200°C/400°F/Gas Mark 6.
  2. Heat oil in a large frying pan and fry onion and peppers until lightly browned.
  3. Spread Refried Beans over h alf of each Tortilla, top with the pepper mixture and sprinkle with cheese.
  4. Fold over to make semi-circles.
  5. Place on a baking tray and cook for about 10 minutes or until the cheese is melted.
  6. Serve immediately with salad.

 

Re-fried beans heating instructions:

Microwave 850W

  1. Empty contents of the 215g can into a microwaveable bowl. Cover with cling film & heat for 60 seconds on full power.
  2. Remove beans from microwave & stir. Recover & heat for a further 30 seconds on full power.
  3. Leave to stand for a further 30 seconds before giving a final stir & serving.


Hob Heating

  1. Place contents of can in a small saucepan & heat over a low to medium heat for about 5 minutes, stirring continually.
