Chef's tips

For a milder flavour, use Discovery Plain Soft Flour Tortillas and extra tzatziki.

An open Fajita with spicy lamb strips, Jalapeños, salad and cooling tzatziki.

Ingredients

  • 500g minced lamb
  • 1 egg
  • 1 sachet Discovery Fajita Seasoning Mix
  • 8 Discovery Chilli and Jalapeño Tortillas
  • 1 jar Discovery sliced Jalapeños (Red or Green)

To serve:

  • 1 large bag green salad
  • 1 red onion, finely sliced
  • 1 small bunch mint, chopped
  • Discovery Soured Cream or 200g pot Tzatziki


Method

  1. Preheat grill.
  2. Mix together lamb, egg and Fajita Seasoning Mix.
  3. Spread very thinly over a large baking tray.
  4. Cook under hot grill for about 5 minutes or until well browned and fully cooked. Cut into thin strips.
  5. Mix salad with onion and mint, and warm Tortillas.
  6. Serve lamb in the warmed Tortillas topped with salad, Jalapeños and Soured Cream.
