An excellent way to jazz up rice as a main dish.

Ingredients

  • 1 red pepper, chopped
  • 1 onion, chopped
  • 1 clove garlic, crushed
  • 1 tbsp oil
  • 250g of long grain rice
  • 1 tbsp Discovery Taco Seasoning Mix
  • 2 tbsp tomato puree
  • 600ml vegetable stock

Optional:

  • chopped parsley
  • tinned red kidney beans


Method

  1. Fry pepper, onion and garlic in oil for 5 minutes.
  2. Add rice, Discovery Taco Seasoning and tomato puree and stir well.
  3. Pour in stock, bring to the boil, cover and simmer very gently for 15-20 minutes, or until all liquid is absorbed, and the rice is cooked.
  4. Fluff up with a fork and serve as an accompaniment.
  5. If desired, add chopped parsley or coriander and tinned red kidney beans.
