Mozzarella Meat Loaf with Sticky Tomato Sauce

Simple to make and utterly delicious, this would be perfect for a Saturday lunch or a midweek supper. Prepare ahead and pop in the oven for a relaxed meal.

Ingredients
  • 500g minced beef
  • 500g minced pork
  • 1 large onion, finely chopped
  • 1 sachet Discovery Fajita Seasoning Mix
  • 1 bunch flat-leaved parsley, chopped
  • 2 eggs
  • 2 x 150g mozzarella balls, thinly sliced

For the sauce:

  • 1 jar Discovery Sticky Ribs Sauce
  • 400g tin chopped tomatoes

Method
  1. Preheat the oven to 200°C/400°F/Gas Mark 6.
  2. Mix all the meat loaf ingredients together, except the mozzarella.
  3. Fill half a large loaf or cake tin with the mixture, top with mozzarella and cover with the remaining mixture.
  4. Cover and cook in the preheated oven for 1 hour, then take off the lid and pop back in the oven for around 10 minutes to brown.
  5. Remove from the oven and leave to stand for a few minutes.
  6. Meanwhile, gently heat the Sticky Ribs Sauce and tomatoes together and pour in any meat juices out of the loaf tin.
  7. Remove the meat loaf from the tin, and cut into slices.
  8. Serve with Refried Bean Mash and green vegetables.
