Nachos may not be authentically Mexican, but crunchy Corn Tortilla Chips certainly are. When you pile them high on Refried Beans, smother them with cheese, a really good Salsa and some soothing Soured Cream, it becomes Mexican Nirvana.

Ingredients

  • 215g Discovery Refried Beans
  • 175g Discovery Tortilla Chips
  • Discovery Salsa (Mild, Medium or Hot)
  • 100g Cheddar cheese grated

To garnish:

  • Discovery Soured Cream
  • Discovery Guacamole
  • chopped spring onions
  • Discovery Sliced Jalapeños (Red or Green)

Method

Microwave method:

  1. Spread the Refried Beans over a large plate.
  2. Microwave on full power (650W) for 1 minute.
  3. Arrange the Tortilla Chips over the beans.
  4. Cover the Tortilla Chips evenly with Salsa and sprinkle over the cheese.
  5. Cook on full power for about 2 minutes, or until the cheese is melted.
  6. Garnish and serve immediately.

Oven method:

  1. Preheat oven to 200°C /400°F/Gas Mark 6
  2. Spread the Refried Beans over an ovenproof dish. Arrange the Tortilla Chips over the beans.
  3. Cover the Tortilla Chips evenly with Salsa and sprinkle over the cheese.
  4. Place in a preheated oven for 10-12 minutes, or until the cheese is melted and beans are hot.
  5. Garnish and serve immediately.
