Chef's tips

Use Tortillas as a pizza base. Top with Discovery Salsa, cheese and your other favourite toppings and quickly cook in a hot oven. Top with Discovery Jalapeños for a spicy Mexican kick.

This is our way of roasting vegetables – Discovery style! Serve as a vegetarian main course or as an accompaniment. Use any of your favourite vegetables.

Ingredients

  • 2 large onions, cut into large chunks
  • 2 red peppers, seeded and cut into large chunks
  • 4 large courgettes, cut into large chunks
  • 2 x 390g tins artichoke hearts, drained and halved
  • 3 tbsp olive oil
  • 1 jar Discovery Creole Season & Sauce


Method

  1. Preheat oven to 200°C/400°F/Gas Mark 6.
  2. Spread vegetables over a large baking tray and coat in oil and Seasoning from the cap.
  3. Cook in preheated oven for about 1 hour or until well roasted, turning occasionally.
  4. Mix vegetables with Creole Sauce and pop back in the oven for 10 minutes until very hot.
  5. Transfer to a serving dish and serve immediately.
