Roasted Sweetcorn Salsa

There are hundreds of recipes for different salsas. Here is one of our favourites. Sweet, sharp and crunchy, this makes a wonderful accompaniment to all sorts of grilled fish and meat, cheese and salads, as well as classic Mexican foods.

Ingredients

  • 2 cobs sweetcorn (or tinned equivalent)
  • 1 bunch spring onions, finely chopped
  • 2 vine ripened tomatoes, chopped
  • Discovery Red Jalapeños, chopped, to taste
  • zest and juice of 1 lemon
  • 1 small bunch coriander, chopped


Method

  1. Peel away outer leaves and husks from sweetcorn.
  2. Hold tightly and scrape the kernels from the cobs with a sharp knife.
  3. Dry fry the sweetcorn in a large frying pan until lightly browned.
  4. Leave to cool.
  5. Once cooled, mix together with all the other ingredients, season to taste and serve chilled.
