Spicy Refried Bean and Sweetcorn Cakes (V)

Refried Beans make a great starter to any Mexican meal. Combined with sweetcorn, fresh coriander, red Jalapeños & a sprinkling of our Fajita Seasoning, shaped into patties & lightly fried, they take on a totally different persona.

Ingredients

  • 800g Desiree potatoes, peeled and diced
  • 215g Tin Discovery Refried Beans
  • 50g tinned sweetcorn, drained
  • 1 small bunch coriander, chopped
  • 1 large egg, beaten
  • 1 tbsp Discovery Red Jalapeños, chopped (optional)
  • 1 tbsp Discovery Fajita Seaoning Mix
  • plain flour to coat
  • oil for shallow frying

To serve:

  • Discovery Salsa
  • Discovery Guacamole
  • 1 Fresh lime


Method

  1. Boil potatoes in salted water until soft. Drain and mash well.
  2. Stir in Discovery Refried Beans and leave to cool.
  3. Once cooled, add sweetcorn, coriander, egg, Jalapeños, Seasoning and mix well.
  4. Form into 12 patties and coat lightly in flour.
  5. Heat oil and shallow fry cakes until golden.
  6. Drain on kitchen paper and serve with Salsa, Guacamole and lime wedges.

Re-fried beans heating instructions:

Microwave 850W

  1. Empty contents of the 215g can into a microwaveable bowl. Cover with cling film & heat for 60 seconds on full power.
  2. Remove beans from microwave & stir. Recover & heat for a further 30 seconds on full power.
  3. Leave to stand for a further 30 seconds before giving a final stir & serving.


Hob Heating

  1. Place contents of can in a small saucepan & heat over a low to medium heat for about 5 minutes, stirring continually.
