We love Fajita Seasoning. We adore Sticky Ribs Sauce. Anything with Tortillas is good. When we combined the three together by seasoning some chicken, smothering it in Sticky Ribs sauce, covering in melting Cheddar cheese and baking it in a folded Tortilla, we knew we were onto something. It's all the flavours we live for in a single dish.

Ingredients

  • 4 chicken breast fillets, cut into bite sized pieces
  • 1 onion, sliced
  • 1 red pepper, sliced
  • 2 tbsp Discovery Fajita Seasoning Mix
  • 2 tbsp oil
  • 1 jar Discovery Sticky Ribs Sauce
  • 4 Discovery Flour Tortillas
  • 50g Cheddar cheese, grated

To serve:

  • a crisp green salad


Method

  1. Preheat oven to 200°C/400°F/Gas Mark 6.
  2. Mix together chicken, onion, pepper, Seasoning Mix and oil.
  3. Cook over high heat until the chicken is cooked and well browned.
  4. Pour over half the Sticky Ribs Sauce, bring to the boil and remove from heat.
  5. Share chicken and vegetables over half of each of the tortillas, and sprinkle with cheese.
  6. Fold over to make semi-circles.
  7. Cook in preheated oven for 5 minutes or until the Tortilla is lightly browned and crisp.
  8. Serve drizzled with remaining sauce and a crisp green salad.
