Strawberry & Mascarpone Quesadillas

Chef's tips

Cut Flour Tortillas into triangles. Fry until crisp. Sprinkle with sugar and cinnamon and serve with whipped cream and fresh fruit.

Sometimes at Discovery we have one of those rare moments of absolute inner peace, contentment & harmony. The first time this pudding emerged from the kitchen was one of them. We had never tried a sweet quesadilla before. Now we think of little else.

Ingredients

  • 250g mascarpone cheese
  • 400g strawberries, trimmed and thinly sliced
  • zest of 1 orange
  • 8 Discovery Plain Flour Tortillas
  • icing sugar


Method

  1. Mix together mascarpone, strawberries and orange zest.
  2. Sandwich the Tortillas together with the filling and coat well on both sides with icing sugar.
  3. Heat a frying pan until very hot. Cook the Tortillas for just a few seconds on each side until the icing sugar is browned and slightly caramelised.
  4. Cut into wedges and serve immediately.
