Warm Fajita Salad

Chef’s tips

Use Tortillas as a pizza base. Top with Discovery Salsa, cheese and your other favourite toppings and quickly cook in a hot oven. Top with Discovery Jalapeños for a spicy Mexican kick.

Fajita chicken served hot on a bed of salad greens and finished off with the flavours of our Tangy Fajita Sauce.

Ingredients

  • oil for shallow frying
  • 2 Discovery Flour Tortillas, cut into thin strips
  • French dressing
  • Discovery Tangy Fajita Table Sauce, to taste
  • 250g chicken breast fillets, cut into thin strips
  • 1 onion, sliced
  • 1 green pepper, sliced
  • 1 red or yellow pepper, sliced
  • 2 tbsp oil
  • Discovery Fajita Seasoning Mix, to taste
  • 200g baby spinach


Method

  1. Heat oil and quickly fry tortilla strips until golden.
  2. Drain on kitchen paper.
  3. Mix together French dressing and Tangy Fajita Table Sauce, to taste.
  4. Coat the chicken, onion and peppers in oil and Fajita Seasoning Mix.
  5. Heat a heavy based frying pan until very hot and fry the chicken mixture over high heat until cooked and well browned.
  6. Arrange spinach, chicken, onion and peppers in bowls and serve topped with Tortilla strips and dressing.
