The world has the Mexicans to thank for the gift of chocolate. The Olmec people were the first to discover the process of extracting the dark, rich substance from the cacao beans and to turn chocolate from a liquid into a solid.
There are more than 300 varieties of chillies in Mexico, ranging from the big poblano to tiny pequin chillies. Perhaps the world's most famous chilli is the jalapeño; the stubby, green variety named for the city of Jalapa, capital of the Gulf Coast state of Veracruz.
