Mention Mexican food and most people immediately think of chilli, tacos and fajitas. Of course, Mexican cuisine is much more than this. It's full of sensational flavours, colourful decoration, and a variety of spices and ingredients.
Traditional Mexican cooking includes a lot of frying, grilling and steaming. The use of an oven started later, only after the arrival of the Americans. A Mexican BBQ, Barbacoa, is different to what we know as a BBQ. A Barbacoa steams and smokes the meat in a large coal-lined pit, adding aroma and moisture to meat recipes.
The most common flavours you'll find in Mexican cooking are garlic, chilli, oregano and cumin. Mexican food isn't just about heat and spice. The flavours and spices are blended together to give a depth of flavour that can suit any palette.
Chilli is one of the most versatile Mexican foods. Make it as mild or hot as you like, and enjoy with a jacket potato, taco trays, nachos, rice, or on its own in a bowl with a dollop of soured cream.
