Heat the oil in a large frying pan. Gently fry the garlic and onion for 2-3 minutes. Add the minced beef and cook, stirring frequently, over a low heat for about 10 minutes until browned. Mix in the sachet of cajun spices. Add the peppers and tomatoes, stir and leave to simmer on a low heat for 15 minutes.
Meanwhile, heat the tortillas in a microwave. They don't need to be very hot, just nice and floppy.
One by one, place a few spoonfuls of meat mixture into each tortilla and wrap them up into a "cannelloni" tube shape. Lay them side by side in a rectangular oven proof dish.
Pour the leftover meat mixture on top of the row of tortillas. Sprinkle grated cheese generously over the top and heat in the oven (at 200o) until the cheese is melted and bubbly.
