BBQ Beef Fajitas and Sangria by Deidre Steain
For BBQ Beef Fajitas:
Discovery Mexican Fajita Kit
600g Lean Rump Steak, thinly sliced
2tbsp vegetable oil (extra oil to brush BBQ plate)
1 brown onion, thinly sliced
1 red pepper, thinly sliced
For Sangria:
750ml Dry Red Wine
1 1/2 Cranberry Drink, chilled
250ml Soda Water
Fresh Strawberries, to serve
Apple, to serve
Orange, to serve
Fresh Mint Leaves, to serve
1. Toss Fajita Seasoning and steak together in a bowl. Heat oil on
a flat BBQ hot plate over high heat. Add the steak, onion, pepper
and stir-fry for 5 minutes.
2. Open tortilla packet. Microwave 10 tortillas in pouch on high
for 15 seconds to separate. Brush BBQ plate with extra oil. Add
tortillas and cook for a few minutes each side, until light
brown.
3. Place steak, onion and pepper on the warmed tortillas. Top with
salsa, roll up and serve.
4. To prepare Sangria: combine the cranberry juice, red wine and
soda water. Pour into chilled serving glasses and add ice. Add a
few pieces of fresh fruit and a sprig of mint.
